For the cookie dough, combine the softened butter, sugar, and powdered sugar in the bowl of a stand mixer. Cream them together until the mixture is smooth and light. I love using my stand mixer here because it saves time and really ensures the butter and sugars are well-blended.

Next, add in the oil, egg, lime juice, and coconut flavoring. Mix until everything is fully combined, scraping down the sides of the bowl as needed.

In a separate bowl, whisk together the flour, salt, and baking powder, then add them to the wet ingredients. Mix until everything is combined into a thick dough. Don’t worry if it feels a bit thick, that’s exactly how we want it!

Use a microplane zester to zest the lime directly into the bowl for the best citrus flavor. Mix on low until everything is combined, then increase the speed and beat for about a minute until the frosting is smooth and fluffy.

  • 1 cup unsalted butter softened
  • ½ cup sugar
  • ¼ cup powdered sugar

  • You can use lemon flavoring instead of coconut for a lemon-lime twist.
