Crumbl Copycat Coconut Lime Cookies

These soft, chewy cookies combine the tropical flavors of coconut and lime, with a tangy frosting that makes them a perfect treat for summer. Light, sweet, and refreshing, they’re ideal for any occasion!

Ingredients
  

  • 1 cup unsalted butter softened
  • ½ cup sugar
  • ¼ cup powdered sugar
  • ¼ cup oil
  • 1 egg
  • 1 tablespoon lime juice
  • 1 teaspoon coconut flavoring
  • 2 ½ cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder

Frosting

  • ½ cup unsalted butter softened
  • 1 cup powdered sugar
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • Additional lime wedges and zest to decorate

Instructions
 

  • Preheat the oven to 350°F. Line baking sheets with parchment paper and set aside.
  • In the bowl of a stand mixer, combine the softened butter, sugar, and powdered sugar. Cream until smooth.
  • Add in the oil, egg, lime juice, and coconut flavoring. Mix well, scraping down the sides as needed.
  • Add in the flour, baking powder, and salt. Mix thoroughly, scraping down the sides often.
  • Scoop the dough onto the baking sheets and gently press each ball to about ½ inch thick.
  • Bake for 10-12 minutes until centers are set. Cool completely.
  • For the frosting, combine softened butter and powdered sugar in the bowl of a stand mixer. Mix on low until combined.
  • Add in the lime juice and lime zest. Mix on medium until smooth and fluffy.
  • Spread a thin layer of frosting over each cooled cookie and sprinkle with additional lime zest.

Notes

  • You can use lemon flavoring instead of coconut for a lemon-lime twist.
  • If you prefer, you can substitute the oil with an extra ¼ cup of butter for a richer texture.
