  • 2 Mixing bowls One for the cream cheese mixture and one for whipping the cream.
  • Hand mixer or stand mixer
  • Rubber Spatula

Ingredients
  

  • 1 cup heavy whipping cream
  • 4 oz cream cheese softened
  • 2 tablespoons powdered sugar / sweetener
  • 1 teaspoon vanilla extract
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • crushed almonds or keto cookies for texture optional

Instructions
 

  • Grab a medium-sized bowl and beat the softened cream cheese, powdered sugar, and vanilla extract together until the mixture is completely smooth. You want it light and fluffy.
  • In a separate, chilled bowl, pour in the heavy whipping cream. Beat it with an electric mixer on high speed until stiff peaks form. This means the cream will hold its shape when you lift the beaters.
  • Gently fold the whipped cream into the cream cheese mixture. Be careful not to deflate the whipped cream; you want to keep that airy texture. Mix until just combined.
  • Wash your strawberries thoroughly. Remove the green tops, then slice them into bite-sized pieces.
  • Rinse your blueberries and pat them dry. Make sure they are fresh and firm.
  • In individual serving glasses or a large trifle bowl, begin layering. Start with a spoonful of the cream mixture at the bottom. Next, add a layer of sliced strawberries, followed by a layer of blueberries. Repeat these layers until you run out of ingredients, finishing with a layer of the cream mixture on top. If you’re using crushed almonds or keto cookies, sprinkle them between some of the cream layers for a nice crunch.
  • Cover your trifle and place it in the refrigerator for at least one hour. This chilling time allows the flavors to blend beautifully and the layers to set, making it easier to serve.
  • Once chilled, your Summer Berry Trifle is ready to be enjoyed! Spoon out generous portions and savor the fresh, creamy goodness.
