How to Make Fully Loaded Sweet Potato Casserole
Start by heating your oven and lining a baking sheet with foil. I like using a rimmed baking sheet here because it keeps everything tidy. Prick the sweet potatoes, then bake them until they are completely tender. Let them cool just enough to handle. Baking them this way helps bring out their natural sweetness.

While the potatoes rest, cook the bacon in a large skillet. Beginning with a cold skillet helps the fat melt out slowly so the bacon cooks evenly. Once crisp, set it aside on a paper towel and save a bit of the fat if you like using it for other dishes.

Scoop the sweet potato flesh into a mixing bowl and break it apart gently with a spoon. You don’t need it perfectly smooth. A little texture keeps the casserole more interesting. Add half the bacon, most of the cheese, the green onions, sour cream, egg, and seasonings. Stir until everything is blended and looks bright and creamy.


Transfer the mixture into a 2 quart baking dish. Leave the top a little uneven because those ridges brown nicely in the oven. Add the rest of the bacon and cheese on top and bake until the edges bubble and the top turns golden. Let it sit for a few minutes before serving so it scoops easily.
