Ingredients
  

For the crust

  • 1 cup unsalted butter softened
  • ½ cup brown sugar
  • 2 cups flour

For the filling

  • 24 oz cream cheese softened
  • ¾ cup sugar
  • 3 tsp eggs
  • 2 tsp vanilla

For the apples

  • 2 tbsp sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 3 cups Granny Smith apples peeled and finely diced

For the topping

  • ½ cup unsalted butter softened
  • 1 cup brown sugar
  • 1 cup flour
  • ½ cup quick oats
  • Caramel sauce to serve

Instructions
 

  • Preheat your oven to 350°F. Line a 13×9-inch baking dish with parchment paper and set it aside.
  • In a mixing bowl, combine flour, brown sugar, and softened butter. Mix until crumbly. Press the mixture evenly into the bottom of the prepared pan. Bake for 14 to 16 minutes, until just starting to brown.
  • In a clean mixing bowl, beat cream cheese until smooth. Add sugar and mix until combined, scraping the bowl as needed. Add eggs and vanilla, then mix until smooth. Pour the filling over the baked crust.
  • In another bowl, toss diced apples with sugar, cinnamon, and nutmeg. Sprinkle evenly over the cheesecake filling.
  • In a mixing bowl, combine softened butter, brown sugar, flour, and oats. Mix until crumbly. Sprinkle evenly over the apples.
  • Bake for 40 to 45 minutes, until the filling is set but still slightly jiggly in the center. Cool to room temperature.
  • Refrigerate for at least 4 hours or until fully set. Drizzle with caramel sauce just before serving. Cut into bars and enjoy.
