Ingredients
  

For the Dressing:

  • ¼ cup extra-virgin olive oil
  • 3 tablespoons vinegar of choice
  • 2 cloves garlic finely minced
  • 1 teaspoon dried oregano plus extra for garnish
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper

For the Salad:

  • 1 cucumber halved lengthwise, deseeded, and sliced
  • 2 green bell peppers chopped into bite-sized pieces
  • 3 cups cherry tomatoes halved
  • 1 block feta cheese diced into ½-inch cubes
  • 1 cup red onion thinly sliced
  • 1 cup black olives pitted
  • 1 cup fresh mint leaves

Instructions
 

  • Grab a small jar or bowl. Add olive oil, vinegar, garlic, oregano, mustard, salt, and pepper. Whisk it all together until it’s well mixed. Set it aside.
  • Slice the cucumber down the middle, scoop out the seeds, and cut into half-moons. Chop the green bell peppers into bite-sized pieces. Cut the cherry tomatoes in half. Slice the red onion thinly.
  • Get a big bowl or serving plate. Add the cucumber, bell pepper, tomatoes, red onion, feta cubes, and olives. Spread everything out evenly.
  • Pour the dressing over the veggies. Use tongs or clean hands to toss everything gently. Make sure the dressing coats all the ingredients.
  • Sprinkle a little more oregano on top. Add fresh mint leaves across the salad. Taste and add more salt or pepper if needed. Serve it up right away and enjoy!
