Fried Green Tomatoes

Ingredients
  

  • 3 fresh green tomatoes sliced ¼ inch thick, at room temperature
  • 1 Salt and pepper to taste
  • ½ cup all-purpose flour
  • 2 large eggs beaten with 1 tablespoon water
  • ½ cup yellow cornmeal
  • ½ cup panko breadcrumbs
  • ¼ teaspoon paprika
  • A pinch of cayenne pepper optional
  • Oil for frying

Instructions
 

  • Season each tomato slice generously with salt and pepper on both sides. Place the slices on a plate or cutting board as you finish seasoning them.
  • Grab three shallow bowls. Put the all-purpose flour in the first bowl. In the second bowl, whisk the eggs with one tablespoon of water. In the third bowl, combine the cornmeal, panko breadcrumbs, paprika, and cayenne pepper (if you're using it).
  • Working with one tomato slice at a time, first dredge it in the flour, making sure to coat both sides. Then, dip it into the beaten egg mixture, letting any excess drip off. Finally, press the slice into the cornmeal and panko mixture, ensuring a good, even coating. Place the coated slices on a baking sheet.
  • Pour enough oil into a large frying pan to come about a half-inch up the sides. Heat the oil over medium-high heat until it reaches 350°F to 375°F (175°C to 190°C). You can test the oil by dropping a tiny bit of the breading mixture into it; it should sizzle immediately.
  • Carefully place the coated tomato slices into the hot oil in batches. Don't overcrowd the pan; give them space. Fry them for about 1 minute per side, or until they turn a beautiful golden brown and look crispy.
