Fried Cabbage

Ingredients
  

  • 1 small green cabbage about 2 pounds, cored and chopped
  • 5 slices bacon coarsely chopped
  • 1 small onion chopped
  • cup chicken broth
  • Salt to taste
  • Pepper to taste
  • ¼ teaspoon smoked paprika
  • Chopped parsley for garnish

Instructions
 

  • In a large skillet, cook your chopped bacon over medium heat. You want it to get perfectly crispy. Once it is done, use a slotted spoon to move the bacon to a plate, but leave all that good rendered fat right in the skillet.
  • Add the chopped onion to the same skillet with the bacon fat. Cook it for about five minutes, stirring it every now and then. The onion is ready when it looks soft and translucent.
  • Now, stir in your chopped cabbage. Let it cook for about ten minutes, making sure to stir it from time to time. This will help it cook evenly and get tender.
  • Pour in the chicken broth and season everything with salt, black pepper, and smoked paprika. Keep cooking and stirring occasionally. You can cook it until the cabbage is as tender as you like it.
  • Finally, return the crispy bacon to the skillet. Give everything a good stir to combine all the flavors. Garnish with some fresh parsley and serve it up hot.
