Ingredients
  

  • 1 small wheel brie 4–5 in
  • ¼ –⅓ cup pumpkin butter
  • 1 –2 Tbsp pepitas plus extra
  • 30 –40 crackers
  • 12 –16 salami slices
  • 3 –4 prosciutto slices with cheese optional
  • 1 cup cheddar cubes
  • 1 cup white cheese cubes
  • 2 cups fruit grapes, blackberries, raspberries
  • 2 clementines segmented
  • 1 crisp apple sliced
  • 1 ripe pear sliced
  • 1 cup green olives
  • 1 cup cornichons
  • ¾ cup pistachios
  • ¼ cup pomegranate arils optional
  • A few maple leaf cookies
  • ½ –¾ cup caramel sauce
  • Fresh rosemary sprigs

Instructions
 

  • Place brie in the center of the board and top with pumpkin butter and pepitas.
  • Arrange crackers, salami, and prosciutto-wrapped cheese around the brie.
  • Set a bowl of caramel sauce and place apple slices beside it.
  • Add grapes, blackberries, olives, cornichons, and cheese cubes in small clusters.
  • Fill gaps with nuts, cookies, and fruit, then garnish with rosemary and pomegranate.
  • Rest the brie at room temperature for 20 to 30 minutes before serving.

Notes

Swap fig jam for pumpkin butter for a fruit-forward option. For a vegetarian board, skip the meats and add roasted nuts or marinated vegetables.
