Ingredients
  

  • ½ cup unsalted butter softened
  • ½ cup cookie butter
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¾ teaspoon baking soda
  • ¾ teaspoon salt
  • 1 ½ cups all-purpose flour
  • 8 Biscoff cookies crumbled
  • ½ cup white chocolate chips

Instructions
 

  • Preheat the oven to 350°F and line baking sheets with parchment paper.
  • In a stand mixer, cream together the butter, cookie butter, sugar, and brown sugar.
  • Add the egg and vanilla, mixing well.
  • Add baking soda, salt, and flour, and mix until combined.
  • Break the Biscoff cookies into pieces and add them to the dough, mixing to combine.
  • Fold in the white chocolate chips.
  • Scoop the dough and flatten to ½-inch thickness on prepared baking sheets.
  • Bake for 10-12 minutes, until the centers are set. Cool on a wire rack.

Notes

You can substitute the white chocolate chips for milk or dark chocolate chips if preferred.
