Ingredients
  

  • 3 tablespoons extra-virgin olive oil divided
  • 3 teaspoons salt divided
  • 2 pounds small red or yellow potatoes washed
  • 2 tablespoons butter melted
  • 1 teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 1/3 cup grated Parmesan cheese
  • Freshly chopped parsley for garnish optional

Instructions
 

  • Preheat the oven to 425°F. Brush a large baking sheet with 2 tablespoons of olive oil to keep the potatoes from sticking.
  • Fill a large pot with water and bring it to a boil over high heat. Add 2 teaspoons of salt and the washed potatoes. Reduce the heat to medium and let the potatoes simmer until they are fork-tender. This should take about 15-20 minutes, depending on their size.
  • Once the potatoes are tender, drain the water and gently pat them dry with paper towels. This helps them crisp up better in the oven.
  • Place the potatoes on the greased baking sheet. Using the bottom of a glass or a measuring cup, press each potato down until it flattens to about 1/2-inch thickness.
  • Brush the tops of the smashed potatoes with the remaining tablespoon of olive oil. Bake in the preheated oven for 15-20 minutes, or until the bottoms turn golden brown.
  • Remove the baking sheet from the oven and carefully flip each potato. In a small bowl, mix the melted butter, remaining 1 teaspoon of salt, garlic powder, and black pepper. Brush the mixture over each potato.
  • Sprinkle the grated Parmesan evenly over the potatoes. Return the baking sheet to the oven and bake for another 8-10 minutes, until the cheese turns golden and slightly crispy.
