Broiled Chicken

Broiled Chicken has always been a recipe that brings me back to simple suppers at home. The sound of sizzling chicken under the broiler and the smell of garlic filling the kitchen makes me think of family gatherings that carried on well past sunset. It is a dish that never asks for much but always delivers comfort.

Equipment

  • Foil or parchment paper
  • Small bowl
  • Pastry Brush
  • Cutting board
  • Sharp Knife
  • Measuring Spoons
  • Oven
  • Airtight container (for storage)

Ingredients
  

  • 3 large chicken breasts
  • 2 tablespoons olive oil
  • 3 teaspoons minced garlic cloves
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • Fresh parsley chopped to serve
  • Fresh dill chopped to serve

Instructions
 

  • Turn your oven on to the broil setting. Line a baking sheet with foil or parchment and spray with non-stick spray. Set aside.
  • Pat the chicken breasts dry with paper towels. Slice each breast open to butterfly so they cook evenly.
  • Brush the chicken with olive oil on both sides. In a small bowl, mix the garlic, cayenne pepper, black pepper, and salt. Rub this mixture evenly over the chicken.
  • Place the chicken on the prepared baking sheet. Cook for 10 minutes. Remove the tray and flip the chicken. Return to the oven for another 10 minutes.
  • Flip the chicken again and cook for 5 more minutes. Check if the chicken is done. If needed, cook in 5-minute intervals until fully cooked through.
  • Remove the chicken from the oven and let it cool slightly. Sprinkle with chopped parsley and dill before serving.
