- 2 ½ cups flour
- 1 cup unsalted butter
- 1 teaspoon salt
- 1 teaspoon sugar
- ⅓-½ cup water
- ¼ cup unsalted butter
- 1 cup sugar
- 1 cup corn syrup
- 3 eggs
- ¼ cup bourbon
- 1 teaspoon vanilla
- dash salt
- 1 ½ cups pecan halves
Preheat oven to 325°F.
Make the pie crust: Combine flour, butter, salt, and sugar in a stand mixer. Add water until the dough comes together. Press into a 9.5-inch pie dish and freeze.
Prepare the filling: Boil butter, sugar, and corn syrup for 3-5 minutes. Cool slightly.
Whisk eggs, bourbon, vanilla, and salt in a bowl. Slowly mix in the corn syrup mixture.
Stir in pecans, pour filling into pie crust, and bake for 55-60 minutes until set but slightly jiggly.
Cool to room temperature and refrigerate until ready to serve.
