Ingredients
  

  • ½ cup 1 stick unsalted butter
  • ¾ cup semi-sweet chocolate chips
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • 2 eggs at room temperature
  • ¾ cup granulated sugar
  • ½ cup brown sugar packed
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • ¾ cup all-purpose flour

Instructions
 

  • Preheat your oven to 350°F. Line a large baking sheet with parchment paper and set it aside. This will help prevent the cookies from sticking and ensure they bake evenly.
  • In a medium saucepan, melt the unsalted butter over medium heat. Let it bubble but be careful not to let it brown. Once melted, add the semi-sweet chocolate chips and unsweetened cocoa powder to the saucepan. Pour the hot butter over the chocolate mixture and set it aside for a few minutes. Stir until the mixture is smooth and well combined.
  • In a large mixing bowl or the bowl of a stand mixer, beat the eggs, granulated sugar, and brown sugar together on medium-high speed. Continue beating for about 5 minutes, or until the mixture is light and fluffy. This will help create the soft texture of the cookies.
  • Add the melted chocolate mixture and vanilla extract into the beaten egg and sugar mixture. Mix on low speed until everything is just combined.
  • Slowly add the all-purpose flour to the dough, mixing on low speed until the flour is fully incorporated. Be careful not to over-mix to keep the cookies soft and fudgy.
  • Use a spoon or cookie scoop to drop dough balls onto the prepared baking sheet. Make sure to leave about 2 inches of space between each dough ball. For a smoother top, roll the dough balls between your lightly oiled palms.
  • Bake the cookies in the preheated oven for 8-10 minutes, or until they are set but still slightly soft in the center. The tops should have a crackled appearance. Remove them from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
