Broiler (optional)
- 2 large sweet onions
- 2 tablespoons butter divided
- 2 teaspoons chili onion crunch
- 1 teaspoon minced garlic
- 1 teaspoon paprika smoked paprika or regular
- 1 teaspoon Old Bay seasoning
- 1 teaspoon Cajun seasoning blend
- 1 teaspoon Italian seasoning blend
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
Preheat your oven to 375°F. This is the perfect temperature to cook the onions to a tender, melt-in-your-mouth texture.
Peel the onions and use a paring knife to carefully cut a hole in the top of each onion about 1 inch in diameter. Then, scoop out the center of the onion to create a well that goes about halfway down.
Slice 1 tablespoon of butter into two pieces and place one piece in the center of each onion well. This will melt as the onions cook, infusing them with flavor.
In a small microwave-safe bowl, melt the remaining 1 tablespoon of butter in the microwave. Once melted, stir in the chili onion crunch, minced garlic, paprika, Old Bay seasoning, Cajun seasoning, Italian seasoning, salt, and black pepper. Stir until all the ingredients are well combined.
Pour the spice mixture evenly into the wells of the onions. Make sure the mixture fills the center and spreads over the sides for maximum flavor.
Wrap each onion tightly in foil and place them in a baking dish. Bake for 50-60 minutes, or until the onions are fork-tender. If they aren't tender after this time, continue baking and check every 10 minutes.
After baking, peel back the foil from the top of the onions. If you like a little extra caramelization, set your oven to broil and return the onions to the oven for 2-3 minutes. Watch closely to avoid burning.
