- 4 large sweet potatoes peeled and diced
- ½ cup unsalted butter softened
- 1 cup milk
- ½ cup brown sugar
- 1 egg
- 2 tablespoons cinnamon
- ½ teaspoon salt
- ½ teaspoon allspice
- ¼ teaspoon nutmeg
- 1 teaspoon vanilla
- 1 ½ cups mini marshmallows
Preheat the oven to 350°F (175°C) and prepare a 2-quart casserole dish with non-stick spray.
Boil the diced sweet potatoes in water for about 15 minutes, until tender.
Mash the sweet potatoes in a stand mixer and add the butter, mixing until smooth.
Add milk, brown sugar, egg, vanilla, cinnamon, allspice, salt, and nutmeg; mix well.
Transfer the mixture to the casserole dish and bake for 40 minutes.
Remove from the oven, top with marshmallows, and bake for an additional 5 minutes until golden.
Let cool for a few minutes, then serve.
- You can use maple syrup instead of brown sugar for a more natural sweetness.
- Feel free to add a sprinkle of chopped pecans or walnuts for added texture.
