Sweet Potato Casserole

Ingredients
  

For the Topping

  • ½ cup granulated sugar
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ¼ cup butter cubed and cold
  • 1 teaspoon cinnamon optional

For the Filling

  • 4 large sweet potatoes baked or boiled
  • 2 large eggs
  • ½ cup sugar
  • ½ cup butter melted
  • 1 teaspoon vanilla extract
  • 2 cups mini marshmallows optional
  • 1 cup pecans roughly chopped, divided

Instructions
 

  • In a large bowl, mix the granulated sugar, brown sugar, all-purpose flour and optional cinnamon.
  • Add the cold butter cubes to the mixture. Use a fork or pastry cutter to cut the butter into the sugar-flour mixture until it becomes coarse and crumbly.
  • Bake or boil the sweet potatoes until they are tender.
  • Preheat your oven to 375°F (190°C) and grease an 8x8-inch baking dish.
  • In a large mixing bowl, combine the cooked sweet potatoes, sugar, eggs, vanilla extract and melted butter.
  • Using a handheld electric mixer or a potato masher, beat or mash the mixture until it is smooth and fluffy.
  • Fold in half of the chopped pecans into the sweet potato mixture.
  • Transfer the sweet potato mixture to the greased baking dish and spread it evenly. Sprinkle the topping evenly over the top, then add the remaining pecans. If desired, scatter mini marshmallows on top.
  • Place the casserole in the preheated oven and bake for 25 minutes until it is bubbly and golden brown.
  • Remove the casserole from the oven, serve warm and enjoy the delicious flavors of this Southern classic.
