Spinach and Goat Cheese Omelet

There’s something really nice about kicking off the morning with a spinach and goat cheese omelet. It’s cozy, filling, and doesn’t take long to make. The combo of creamy goat cheese and fresh spinach just works so well together. I love how something this simple can feel so comforting without needing a lot of effort.

- 3 large eggs
- 1 cup fresh spinach chopped
- 2 ounces goat cheese crumbled
- 1 tablespoon butter
- salt to taste
- pepper to taste
Crack the eggs into a bowl. Add a pinch of salt and pepper. Beat them well with a fork or whisk.
Melt the butter in a non-stick skillet over medium heat. Add the chopped spinach and cook until wilted, about 1-2 minutes.
Pour the beaten eggs over the spinach. Tilt the pan gently to spread the eggs evenly.
When the eggs begin to set, sprinkle the goat cheese over one half of the omelet.
Use a spatula to fold the omelet over the cheese. Cook for another minute until the cheese softens.
Slide the omelet onto a plate. Serve hot and enjoy right away.
