Southern Mash

There’s something about Southern Mash that warms the soul and takes me back to family gatherings where the table was always full of love and laughter. The rich, buttery potatoes blended with garlic, onions and cream cheese make for a comforting, simple and satisfying dish.

Ingredients
  

  • 5 pounds Russet potatoes peeled washed and cut into quarters
  • 1 medium onion peeled and chopped
  • 2 garlic cloves
  • ½ cup half and half
  • 3/4 cup butter
  • ½ teaspoon salt
  • 8 ounces cream cheese
  • ¼ teaspoon black pepper
  • Parsley to garnish

Instructions
 

  • Bring a large pan of salted water to a boil. Add the peeled, washed and cut potatoes. Simmer for about 20-25 minutes until the potatoes are soft and tender.
  • While the potatoes cook, heat some oil in a pan over medium heat. Add the minced garlic and sauté for about 45 seconds, then add the chopped onion. Cook until the onion becomes translucent, about 5-7 minutes. Set aside.
  • Drain the cooked potatoes in a colander, then return them to the pot. Start mashing the potatoes until they’re nice and smooth.
  • Mix in the sautéed garlic and onions, butter, half and half, cream cheese, salt and pepper. Continue mashing and stirring until everything is well combined and the potatoes reach your desired consistency.
  • Transfer the mashed potatoes to a serving dish, sprinkle with chopped parsley and serve immediately. Enjoy the creamy, dreamy goodness of Southern Mash!
