Pimento Cheese Sandwich

There's something about a Pimento Cheese Sandwich that just makes me happy. It's creamy and full of that Southern goodness I grew up with. Cold or grilled in a skillet, it always feels like coming home. This sandwich has been in my family’s kitchen forever, and every bite brings back that warm, familiar comfort.

Ingredients
  

  • cups sharp cheddar cheese finely shredded
  • ½ cup Monterey Jack cheese finely shredded
  • 4 oz cream cheese softened
  • cup mayonnaise
  • 4 oz jar pimentos drained, diced
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 Salt and pepper to taste
  • 8 slices soft white sandwich bread or rye, wheat, or whatever you prefer

Instructions
 

  • In a mixing bowl, stir the cream cheese and mayonnaise together until smooth and creamy.
  • Add the shredded cheddar cheese, Monterey Jack cheese, diced pimentos, garlic powder, and onion powder. Mix until everything is well blended.
  • Add a pinch of salt and pepper. Stir and taste. Add more if you like.
  • Lay out four slices of bread. Spread a generous amount of the pimento cheese mixture on each slice. Top with the remaining four slices of bread.
  • You can serve the sandwiches just like that, or butter the outsides and toast them in a skillet over medium heat until golden and melty.
  • Cut the sandwiches in half if you’d like, and serve warm or cold. Either way, they’re delicious.
