Jalapeño Popper Grilled Cheese

When I want something comforting with a little kick, I always turn to Jalapeño Popper Grilled Cheese. It’s a Southern spin on a classic sandwich. Crispy, melty, and packed with flavor.

Ingredients
  

  • 4 ounces cream cheese softened
  • 2 tablespoons jalapenos chopped (seeds and membranes removed)
  • ¼ teaspoon garlic powder
  • 4 slices bread
  • 8 slices cheddar cheese
  • 4 slices bacon fully cooked
  • 4 tablespoons butter melted

Instructions
 

  • In a small mixing bowl, add the softened cream cheese, chopped jalapeños, and garlic powder. Mix everything together until smooth.
  • Place two slices of bread on a clean surface. Add two slices of cheddar cheese to each piece of bread.
  • Divide the cream cheese mixture between the two sandwiches. Spread it evenly over the cheese from edge to edge.
  • Cut the cooked bacon slices in half. Place them on top of the cream cheese mixture on each sandwich.
  • Add two more slices of cheddar cheese on top of the bacon. Close each sandwich with another slice of bread.
  • Brush the melted butter on the outer sides of each sandwich. Make sure the butter covers the bread evenly.
  • Heat a skillet over medium heat. Place the sandwiches in the skillet, buttered side down. Cook for 3–4 minutes or until golden brown.
  • Flip the sandwiches carefully and cook the other side for another 3–4 minutes, or until the cheese is fully melted and the bread is golden.
  • Remove the sandwiches from the skillet. Cut each one in half and serve hot.
