Fried Chicken Thighs with Milk Gravy

Nothing feels quite like home the way Fried Chicken Thighs with Milk Gravy does. This is the kind of meal that brings everyone to the table fast. The crispy coating, juicy chicken, and creamy gravy remind me of slow Sundays and second helpings.

Ingredients
  

  • 4 boneless skinless chicken thighs
  • ½ cup milk
  • 1 large egg
  • 1 cup AP flour
  • ¼ cup corn starch
  • 1 tsp kosher salt
  • 1 tsp black pepper finely ground
  • ½ tsp baking powder
  • ½ tsp garlic powder
  • ½ tsp cayenne pepper
  • 1 cup oil for frying

Milk Gravy

  • 2 tbsp AP flour
  • 2 tbsp unsalted butter
  • 1 cup whole milk
  • ½ cup heavy cream
  • 2 tsp fresh ground black pepper
  • 1 tsp kosher salt

Instructions
 

  • Crack the egg into a bowl and pour in the milk. Whisk them together until smooth and fully combined.
  • In another bowl, mix the flour, cornstarch, salt, baking powder, garlic powder, cayenne pepper, and black pepper. Stir well to blend everything.
  • Dip each chicken thigh into the egg mixture. Then press it into the flour mix, coating it well on all sides.
  • Place the coated chicken on a tray. Let it rest uncovered in the fridge for about half an hour.
  • Pour oil into a heavy skillet until it’s about half an inch deep. Heat it over medium heat until hot.
  • Place the chicken in the skillet and fry it in batches. Turn each piece once until it’s golden brown and cooked through.
  • Remove the chicken and let it drain on a paper towel or wire rack. Keep it warm while you make the gravy.
  • Melt the butter in a pan over medium heat. Add the flour and stir until it’s smooth and the raw flour smell is gone.
  • Slowly pour in the milk and cream while whisking. Keep whisking as the gravy thickens.
  • Stir in salt and plenty of black pepper. Spoon the warm gravy over the fried chicken and enjoy.
