Chicken Spaghetti

Southern comfort food has a way of making you feel right at home, no matter where you are. One dish that always brings back memories of family gatherings and cozy nights is Chicken Spaghetti.

Ingredients
  

  • 12 ounces uncooked spaghetti broken into 2-inch piece
  • 1/4 cup butter cubed
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 3 tablespoons all-purpose flour
  • 2 cups 2% milk
  • 3 cups cubed cooked chicken breast
  • 1 can 10-3/4 ounces condensed cream of chicken soup, undiluted
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 4 ounces cream cheese cubed
  • 1 1/2 cups shredded cheddar cheese divided
  • 1/2 teaspoon pepper
  • Minced fresh parsley optional

Instructions
 

  • Preheat the oven to 350°F. Cook the spaghetti until al dente, reserving 1/2 cup of pasta water before draining.
  • Melt the butter in a Dutch oven over medium heat. Add the chopped onion and cook for 6-8 minutes, then add minced garlic and cook for 1 minute.
  • Stir in the flour, then gradually add the milk. Bring to a boil and cook, stirring constantly, until the sauce thickens (about 2 minutes).
  • Stir in cubed chicken, cream of chicken soup, bell peppers, cream cheese, 3/4 cup shredded cheddar, and pepper. Stir until melted and combined.
  • Toss the cooked spaghetti with the sauce, adding reserved pasta water if needed to reach desired consistency.
  • Transfer to a greased 13x9-inch dish. Sprinkle remaining shredded cheddar cheese over the top. Cover with foil and bake for 20 minutes, then uncover and bake for 10-15 more minutes.
  • Garnish with minced parsley and serve warm. Enjoy your Southern Chicken Spaghetti!
