Ingredients
  

  • 2 Cups Cauliflower Rice half of Medium Cauliflower
  • 1/4 Cup Cream Cheese
  • 1/2 Cup Broth
  • 2 tablespoons Butter
  • 1/2 Cup Shredded Cheese
  • 1/2 teaspoon Xanthan Gum
  • 3 Garlic cloves

Instructions
 

  • Before you start cooking, make sure to have all your ingredients ready. Crush the garlic, shred the cheddar and rice the cauliflower so everything is within arm’s reach.
  • In a large pan, melt the butter over medium heat. Add the crushed garlic and cook for about 1 minute, until the garlic turns slightly golden. Add the cauliflower rice to the pan with a pinch of salt and pepper. Stir and cook for 3-4 minutes, until the cauliflower softens.
  • Once the cauliflower rice is almost cooked, add the cream cheese. Stir until it starts to melt into the cauliflower. Then, add the shredded cheddar cheese and continue stirring until everything is smooth and creamy.
  • Pour the broth into the pan, and using a hand blender, mash the cauliflower mixture until smooth. You can leave a few chunks if you prefer a more textured dish.
  • If you’d like the mashed cauliflower thicker, sprinkle in the xanthan gum and mix well. It will continue to thicken as it cools, so be mindful of how much you add.
  • Once the mashed cauliflower reaches your desired consistency, transfer it to a serving dish. Sprinkle a little extra cheddar on top if you’d like, and serve it hot!
